1. Mauritian Chicken Curry (Cari Poulet)

Ingredients

• Chicken pieces

• Curry powder (Mauritian blend preferred)

• Onion, garlic, ginger

• Fresh tomatoes or purée

• Thyme, curry leaves

• Salt & pepper

How to Make

1. Sauté onions, garlic, ginger.

2. Add curry powder and fry until aromatic.

3. Add chicken and coat well.

4. Add tomatoes + a little water.

5. Simmer until the chicken is cooked.

6. Finish with curry leaves..
